The restaurant is built around the grill — the oldest cooking technique, and still one of the most contemporary for its ability to preserve purity, texture, and flavour.

Sourcing comes directly from Pescaderías Coruñesas, the historic Madrid-based fishmongers known for supplying Spain’s finest restaurants with exceptional daily catch. Filandón’s menu reflects this heritage, highlighting impeccable fish and seafood, simply grilled, alongside carefully selected meats and vegetables cooked over embers.
