La Falda opened its Chamberí outpost in 2025 in the former Sylkar, a Madrid institution with a long association with tortilla. Alejandro Oliveira and the team behind the original Lavapiés taberna have made the dish their own, alongside a menu that draws on Spanish cooking and Oliveira’s Galician influences.
The reason to come is the Betanzos style tortilla, barely set inside and made without onion. Oliveira won Spain’s national tortilla championship in 2025, after finishing second in 2024. La Falda also took first place in a separate tortilla competition in 2023 with its version made with grelos and chorizo from Lalín. A casual, lively address and a very good stop for tortilla in Madrid.
