With three locations in Madrid, Hermanos Vinagre is a modern take on the classic Spanish tapas bar. The concept is simple but well executed: high-quality conservas, perfectly marinated anchovies, sharp and refreshing pickles, and all the small bites that define the city’s aperitivo culture. Typical favourites include gildas, bottarga with almonds, boquerones, stuffed peppers, cockles, mussels, and their versions of simple montaditos and lightly fried bites served with crisp vermouth or a cold beer.
Despite being a small chain, the quality remains consistently high, and the service has the warmth and efficiency of a well-run neighbourhood bar.
