If any restaurant truly captures the spirit of modern molecular gastronomy, it is Disfrutar. Opened in 2014 by Mateu Casañas, Oriol Castro and Eduard Xatruch—all veterans of elBulli and founders of Compartir in Cadaqués—the restaurant has become one of Europe’s most influential destinations for avant-garde cuisine.

Located in the Eixample, opposite the Ninot Market, Disfrutar’s design pays tribute to the Mediterranean: ceramic textures, a clay-coloured corridor that passes through the open kitchen, and a bright dining room inspired by small coastal villages. The atmosphere is contemporary yet warm, reflecting the trio’s roots.

The culinary experience centres on tasting menus defined by technical mastery, playfulness, and a distinctly Mediterranean identity. Bold, inventive and relentlessly creative, Disfrutar continues to push the boundaries of flavour and form while remaining anchored in pure enjoyment — true to its name.
