
Ibiza’s dining scene has changed dramatically over the years, and not always for the better. As international concepts multiply and celebrity chefs continue to arrive, the island’s traditional culinary identity is quietly fading.
According to Pedro Tur, a true Ibizan and chef owner of Sa Nansa restaurant, reputation alone does not guarantee success here. Ibiza has its own traditions, and what works elsewhere does not always translate. Visitors are not necessarily drawn by stars, and the island has never depended on them.
He also points to a more structural concern: the lack of generational renewal, as older family run kitchens gradually disappear without clear succession. In their place, a new wave of high profile openings continues to emerge, often driven by investment and name recognition.
