Steff Houlberg is one of Denmark’s classic hot-dog institutions, rooted in the country’s traditional pølsevogn culture and found both in central Copenhagen and at the airport. For decades, it has been a go-to stop for a simple, unmistakably Danish hot dog: a grilled or boiled sausage in a soft roll with the traditional toppings of mustard, ketchup, remoulade, onions and pickles. Consistent, quick and deeply comforting, it remains a defining taste of everyday Copenhagen.
