Opened in 2017 in San Giovanni, SantoPalato is the creative playground of chef Sarah Cicolini. The name nods to the Futurist Taverna del Santopalato, but the spirit is rooted in authentic Roman cooking — from quinto quarto to Jewish-Roman classics — reinterpreted with boldness and heart. Sourcing from small farmers and butchers who champion forgotten cuts, Cicolini delivers a cuisine that is expressive, concrete, and deeply tied to tradition.
