The kitchen focuses on classic Danish smørrebrød and warm dishes, all made to order and built on high-quality ingredients—pristine herring, butter-fried plaice, hand-peeled shrimp and seasonal specials that evolve the tradition. Refreshed over the years yet faithful to its roots, Schønnemann was revitalised in the 2000s and is now run by Juliette and Thomas Gaarn Rasmussen, who preserve its history while ensuring its continued place among Copenhagen’s essential lunch destinations.
