Founded by Niklas Ekstedt in 2011, the restaurant was a pioneer in bringing fire-based cooking into a fine-dining context in Scandinavia, a region not traditionally associated with wood-fire cuisine. Today, under Head Chef Florencia Abella, Ekstedt continues to explore Nordic ingredients through techniques built around the hearth, wood oven and smoker. The result is a focused, sensory experience where flame, smoke and seasonality define the cooking.
