Chef Cesare Battisti reinterprets Lombard classics such as risotto alla Milanese and cotoletta with precision, lightness, and carefully sourced ingredients from small producers.
His philosophy, codified in a Cuisine Decalogue, places sustainability — environmental, economic, and social — at its core.
