A destination for seafood lovers, it pays homage to the region’s deep connection with the sea. Of course, bouillabaisse makes an appearance—but here it’s reimagined with finesse. What stands out most is Passédat’s extraordinary use of Mediterranean fish, prepared with precision and deep respect for their natural flavours.
