After being diagnosed with coeliac disease, she turned her personal challenge into a creative force, rethinking Mediterranean cooking through alternative flours and locally sourced ingredients. The menu reflects both tradition and imagination, with dishes like oyster ceviche and calisson ice cream capturing the spirit of Provence in unexpected ways.
