La Villa Madie, one of the newest 3-Michelin-star restaurant in France, offers refined Mediterranean cuisine in an upscale venue with a terrace that boasts sweeping sea views. Led by chef Dimitri Droisneau, originally from Normandy, the restaurant reflects his deep love for the South of France, where he moved 15 years ago after working at top Parisian establishments such as L’Ambroisie. Dimitri and his wife Marielle have been running La Villa Madie since 2013, showcasing a culinary style full of sun, vibrant colours, and impeccably balanced flavors. The magnificent setting, overlooking the sea and pine trees, is matched by the extraordinary dishes, including carabineros shrimp with beetroot, kumquat, and a sauce made from their heads; turbot with sancho pepper sauce; and local langoustine with caviar. The menu depends on the season.
