Led by Santiago Lastra, formerly of Noma Mexico, KOL brings the flavours of Mexico into harmony with British terroir. Awarded one Michelin star, it champions seasonality and sustainability, replacing imported ingredients with local finds such as Cornish crab, Scottish seaweed and wild herbs. The result is light, elegant cooking that feels both rooted and exploratory. Downstairs, the intimate Mezcaleria serves exceptional agave spirits and perfectly balanced Margaritas.
