Tucked into a pocket-sized room in Saint-Germain-des-Prés, Huitrerie Régis is a benchmark for oyster lovers in Paris. The menu is deliberately narrow, focusing on some of the finest varieties: fines de claire, delicate and light; spéciales de claire, rounder and more fleshy; the rare pousse en claire from Marennes-Oléron with its pronounced sense of terroir; the perle noire from Normandy, known for its crisp bite; and the celebrated Belon flat oyster. A handful of other shellfish—shrimp, clams, sea urchins—complete the offering, all served with an honesty and simplicity that lets the produce shine.
