Located in Ciboure’s historic Croix Rouge district, Chez Mattin has been a landmark for Basque cuisine since the 1970s, when the Niquet family transformed their former grocery shop into a restaurant. Today, Michel Niquet and his wife, Céline, continue the family’s legacy, preserving the recipes that have defined the house for decades while bringing a fresh perspective shaped by Michel’s experience and travels.

The menu remains rooted in Basque tradition, with regional classics sitting alongside more contemporary creations. It is a restaurant that honours its heritage while continuing to evolve, making it one of the area’s most enduring dining institutions.
