His cooking draws on everything from temple cuisine and street food to barbecue culture and the royal court, shaped by years of travelling through South Korea to reconnect with its history, flavours and craft.
The restaurant’s name refers to a Zen Buddhist riddle meant to expand perception—an idea mirrored in Baumann’s approach. Koan is both a journey inward and outward: a reflection on identity, and a thoughtful, contemporary interpretation of Korean cuisine rooted in curiosity, memory and a deep respect for ingredients.
