One of the most memorable fine dining experiences I’ve had in recent years, Memories by Sven Wassmer is the latest Swiss restaurant to receive three Michelin stars (2022) and stands among the strongest of its kind. Wassmer elevates Alpine cuisine with refined simplicity, transforming local flavours into dishes of remarkable precision. Knöpfli dumplings with black truffle, barely cooked char with roasted Alpine dairy cream and fir oil, or the unforgettable old dairy cow with potato purée exemplify his mastery—proof that simplicity, when done perfectly, leaves the deepest impression.
