Chef Willem Hiele draws inspiration from the coastal landscapes of Flanders, where he was raised among generations of fishermen. His one-Michelin-starred restaurant in Oudenburg offers an ever-changing menu built around North Sea produce, often cooked over an open fire, guided by intuition and the rhythm of the day.
Set within a striking modernist house designed by Belgian artist-architect Jacques Moeschal, the property also includes a boutique hotel, offering guests a complete culinary and architectural escape surrounded by the quiet beauty of the polders.
