Review

Arnaud Lallement, son of the legendary chef Jean-Pierre Lallement, grew up in the family kitchens and inherited both his passion and savoir-faire from his father. In homage to him, the iconic blue lobster remains a signature dish of the house.

After graduating from the École Hôtelière de Strasbourg at just 18, Arnaud trained with legends such as Roger Vergé at Le Moulin de Mougins, Michel Guérard and Alain Chapel. In 2002, he took over the family restaurant, carrying forward its spirit while refining his own vision.

Since 2014, L’Assiette Champenoise has held three Michelin stars and is consistently ranked among the world’s finest restaurants by La Liste—a place where tradition and innovation meet in perfect balance.
