Ramen Wagaya grew out of Ramen Project, a series of pop ups by French Japanese couple Lise and Tsubasa Mikami, before they opened this small ramen shop in the 11th arrondissement in 2025. Their ramen is built around pork and chicken broths, with noodles and broths made in house. The couple experimented with different flours and recipes to adapt their ramen to Parisian water.
The signature Gyokaï adds dried fish to the pork and chicken, creating a richer, more intense triple broth seasoned with soy sauces. Shoyu and the lighter shio ramen are also available. The restaurant has around 20 seats and does not take reservations.
