Saddle, a one-Michelin-star restaurant, occupies the former home of Jockey, the historic dining room that shaped Madrid’s gastronomic, political and cultural life from 1945 to 2012 under Clolado Cortés, a pioneer of guest-centred hospitality.
Opened in 2019 as a tribute to that legacy, Saddle focuses on French-influenced haute cuisine built around peak-season produce. Headed by chef Pablo Laya, the kitchen revisits classic preparations with contemporary precision, while the dining room maintains a discreet, formal service style reminiscent of older European institutions.
