Nestled near Lausanne, the legendary restaurant l’Hôtel de Ville Crissier — affectionately known as “Crissier” — has long stood as one of the very best classic restaurants in existence. Founded in 1955 by the parents of chef Frédy Girardet, it rose to global prominence when Girardet secured three Michelin stars in 1994, setting a benchmark for French gastronomy. The tradition continued under chef Philippe Rochat, who regained its three stars in 1997, and later Benoît Violier, before passing into the hands of Franck Giovannini. With Giovannini in the kitchen and his wife leading the dining room, Crissier remains a temple of precision, elegance, and timeless culinary excellence.
