Opened in April 2024 near Dupleix in Paris’s 15th arrondissement, Pâtisserie Toshiya Takatsuka marks the solo debut of the former pastry chef of three-Michelin-starred Kei. Originally from Saitama, Japan, Takatsuka trained at the Tsuji Culinary Institute, honed his craft under Yoshiharu Fujiu in Tokyo, and later worked with Roland Del Monte in the south of France before joining L’Atelier de Joël Robuchon, Thoumieux, and Hôtel Lancaster in Paris. After a decade at Restaurant Kei, he now presents his own creations in a bright, contemporary space soon to include a tearoom terrace.
