Osteria del Mirasole, founded in 1989 by chef Franco Cimini when he was just twenty-two, is one of Emilia’s great unsung heroes. Conceived as a place of rustic authenticity, it recreates the atmosphere of wartime osterie while evolving into a deeply personal space filled with antique paintings, tools and trinkets. At its heart is a stone fireplace, where Cimini cooks meat over glowing embers, giving each cut an unforgettable flavour. His cuisine is rooted in simplicity and respect for raw ingredients, elevated by produce from the family’s closed-cycle farm, managed together with his wife Anna. Today, their son Riccardo brings warmth and precision to the dining room, completing the harmony that defines Mirasole. The result is food of great character and sincerity — ancestral in spirit yet profoundly comforting, like a taste of memory itself.
