Le Doyenné is more than a restaurant — it is a guest house and working farm just an hour from Paris. Set in the former stables of the historic Château de Saint-Vrain, the place carries a unique artistic heritage, once home to the monumental creations of Niki de Saint Phalle and Jean Tinguely in the 1970s.

Chefs James Henry and Shaun Kelly, together with the Mortemart family, took over the château barns in 2017 and carefully restored them. Their vision is rooted in the potager, where regenerative agriculture brings heirloom vegetables back to life. These, along with produce from the farm, form the foundation of a cuisine deeply tied to the land.
