Founded in 2001 in La Latina and now also present in the Salamanca district, Juana la Loca is known for its contemporary interpretation of the classic pintxo bar. The cooking is straightforward and rooted in product — a blend of Basque inspiration and global influences shaped by years of culinary travel. For more than two decades, the restaurant has built its identity on authenticity, flavour and an unwavering respect for ingredients.

Its most recognised dish is the tortilla de patatas, considered by many a Madrid icon. Prepared over two and a half hours at low heat, it combines carefully chosen oils, organic spices and precisely seasoned eggs to achieve a soft, custard-like centre and a distinctive aroma. Served at room temperature, the tortilla reveals its full depth of flavour — simple in appearance, but meticulously crafted.
