Jeremy Chan, a Chinese-Canadian philosopher turned chef, co-founded Ikoyi in 2017 with his friend Iré Hassan Odukale as probably first Nigerian inspired fine dining restaurant in London. The restaurant has since evolved significantly, earning two Michelin stars while maintaining the ingenious use of West African spices as central to its identity.
In addition to this distinctive flavour profile, Ikoyi emphasizes on British seasonality, showcasing carefully sourced ingredients such as oysters and scallops. Before launching Ikoyi, Chan dedicated years to meticulously researching West African culinary traditions and honing his skills at renowned establishments like Noma and Hibiscus, which fueled his fascination with the region’s untapped flavours and countless possibilities for interpretation and creativity.
