Le Gabriel, the three-Michelin-starred restaurant at La Réserve Paris, is led by chef Jérôme Banctel. Originally from Brittany, he draws inspiration from the seas and terroir of his native region, as well as from a career shaped in some of the most illustrious Parisian kitchens, including L’Ambroisie, Alain Ducasse, and Lucas Carton under Alain SenderensWith this background, he has developed a style that combines respect for ingredients, classic French cooking tradition, and impeccable technique. One of the most striking dishes was a humble carrot, candied almost like a confection and paired with a vivid ginger sauce—an elegant reminder of how simple produce can become transcendent in the right hands.
