Restaurant ArThe restaurant of winemaker Armand Heitz, Chez Armand at the Château in Mimande, extends the same philosophy that guides his domaine: an agricultural approach rooted in permaculture, agroecology and respect for living systems. Known for his expressive wines across appellations from Pommard to Chevalier-Montrachet, Heitz places farming at the centre of both his viticulture and his cuisine.
The restaurant translates this vision into a straightforward “from farm to fork” table. The meat and produce come directly from his nearby farm, where cattle and sheep are raised on grass and cereals grown on the estate. Dishes follow availability and are often cooked in a bread oven or over a wood-fired brazier, keeping the style elemental and true to place.
Set in Chaudenay, a few kilometres from the Côte, the atmosphere is simple and rural. The wine list includes bottles from the Heitz estate alongside a small selection of Burgundy and other regions from producers he admires.mand Heitz
