Behind a black lacquered door on Quai Voltaire, Hanada is the newly opened restaurant of Masayoshi Hanada, originally from Fukuoka and based in Paris for the past ten years. Regarded as one of the best sushi masters in Europe, he is devoted to the art of Edo-mae sushi, bringing over two decades of experience to an omakase where each nigiri is shaped with quiet precision, exceptional knife skills, and deep respect for seasonality. The interior, entirely clad in black wood, makes the pale hinoki counter stand out even more—a stage for an experience that is calm, focused, and pure. More than a restaurant, Hanada is a sanctuary for sushi in its most essential form.
