Etxemaite

Located in San Sebastián’s residential Egia neighbourhood, Etxemaite is one of the city’s most notable recent restaurant openings. It is the first independent project of Mexican-born chef Paolo Herranz, formerly of Elkano, who runs the restaurant together with his wife, Verónica.

The cooking is rooted in Basque tradition while reflecting the techniques and experience Herranz has developed throughout his career. Expect seasonal seafood, exceptional produce and carefully selected meats, with familiar Basque flavours presented through a contemporary lens without losing their identity. Many of the vegetables, herbs and fruit are grown on the team’s own land in nearby Aia, while seafood and other ingredients come from trusted local producers.
