In the residential Chamartín district, Sacha has long been one of Madrid’s most distinctive and characterful restaurants — a place where the cooking speaks for itself. Run by Sacha Hormaechea, chef and photographer, the restaurant feels like a Spanish bistro shaped entirely by his personal vision.

His cuisine is grounded in tradition yet expressed with intuition and bold simplicity. Signature dishes such as the tortilla vaga and deconstructed lasagna of spider crab or sea urchin (when in season) have become modern classics, emblematic of his ability to turn humble ideas into unforgettable flavours.
